True Chimichurri is prepared by hand-chopping all the ingredients, which gives it an authentic texture and flavor. Although it's tempting to use a food processor, it will crush the herbs and create a mushy consistency that is not typical for this sauce. All the ingredients should be distinct to taste each component.

  • 1 cup fresh parsley, finely chopped
  • 0.5 cup fresh oregano (or 1 teaspoon dried)
  • 4 cloves garlic, minced
  • 0.5 cup red wine vinegar
  • 0.75 cup extra virgin olive oil
  • 0.5 teaspoon red chili flakes (optional)
  • 1 to taste salt and black pepper

Instructions

Step 1: Preparing the Herbs and Garlic

Thoroughly wash and dry the parsley and oregano. Chop them very finely, preferably by hand. Mince the garlic just as finely. Place everything in a medium-sized bowl.

Step 2: Mixing the Sauce

Add the red wine vinegar, chili flakes, salt, and black pepper to the bowl with the herbs. Mix well to combine the flavors. Then, slowly pour in the olive oil, whisking as you go to incorporate it into the mixture.

Step 3: Resting and Serving

Let the sauce rest at room temperature for at least 30 minutes to allow the flavors to meld perfectly. If possible, let it rest in the refrigerator overnight. Stir it once more before serving. Chimichurri is best served with grilled beef and sausages.
