The magic of Choripán lies in its simplicity. The key is to use high-quality sausage, ideally one made for grilling, and a fresh, crusty baguette. Although the chorizo is the main star, it wouldn't be the same without the accompanying chimichurri sauce. This sauce adds a freshness and spiciness that perfectly complements the rich flavor of the grilled meat.

  • 4 fresh pork sausage (chorizo)
  • 2 pcs baguette or bread (similar to a French baguette)
  • 1 cup chimichurri sauce, to taste

Instructions

Step 1: Preparing the Grill

Heat the grill to a medium-high temperature. You can also grill the sausages in a skillet with a little oil if a grill is not available.

Step 2: Grilling the Sausages

Place the sausages on the grill and cook for approximately 15-20 minutes, turning them often to ensure they cook evenly. Once done, slice them lengthwise in half.

Step 3: Preparing the Bread

Slice the baguette in half and toast it on the grill or in a toaster until crispy. You can drizzle the bread with some of the fat that rendered from the sausages for extra flavor.

Step 4: Assembling the Sandwich

Place the sliced sausage into the toasted baguette. Generously add chimichurri sauce and serve immediately.
