Despite its name, Lomo a lo Pobre is a true king among Chilean dishes. Simple yet perfectly balanced flavors make it an absolute favorite. Although traditionally made with beef, there are also variations with chicken or pork. For the best experience, make sure the beef is tender and the french fries are freshly fried.
Ingredients
Ingredients for Lomo a lo Pobre
- 4 slices beef steak (e.g., rib eye or sirloin)
- 4 pcs potatoes, peeled and cut into french fries
- 8 pcs eggs
- 2 large onion, sliced
- 1 as needed vegetable oil
- 1 to taste salt and black pepper
Instructions
Step 1: Preparing the French Fries
Step 2: Sautéing the Onions
In a pan with a little oil, sauté the onion slices over medium heat until they soften and begin to brown (about 15-20 minutes). The onion should be soft and sweet. Remove from the pan and set aside.
Step 3: Cooking the Meat and Eggs
Season the steaks with salt and pepper. In the same pan where you sautéed the onions, heat a little more oil over medium-high heat. Sear the steaks on both sides to your desired doneness. Remove the steaks and immediately crack the eggs into the pan. Fry them sunny-side up until the yolks are runny.
Step 4: Serving
On each plate, place a steak, a large portion of freshly fried french fries, two fried eggs, and a large spoonful of sautéed onions. Serve immediately, preferably with extra bread for dipping into the yolks.
