Ingredients for Pollo Arvejado

  • 4 pcs chicken thighs or other bone-in pieces
  • 2 tablespoons olive oil
  • 1 pc onion, chopped
  • 1 pc carrot, sliced into rounds
  • 2 cloves garlic, minced
  • 2 pcs potatoes, diced
  • 1 cup fresh or frozen peas
  • 0.5 cup white wine
  • 1.5 cups chicken broth
  • 1 teaspoon sweet paprika
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon dried oregano
  • to taste salt and pepper

Instructions

Step 1: Sear the chicken

In a pot over medium heat, heat the olive oil. Season the chicken pieces with salt, pepper, cumin, and oregano. Sear them on all sides until golden, then remove them from the pot.

Step 2: Sauté the vegetables

Add the chopped onion and carrot to the same pot. Sauté for 5-7 minutes until the onion is soft. Add the minced garlic and paprika and cook for another minute until fragrant.

Step 3: Simmer with wine and broth

Pour the white wine into the pot, scraping up any browned bits from the bottom. Return the chicken to the pot and add the chicken broth. Bring to a boil, then reduce the heat, cover, and simmer for 30 minutes.

Step 4: Add potatoes and peas

After 30 minutes, add the potatoes to the pot. Cover and simmer for another 20-30 minutes, until both the chicken and potatoes are completely tender. Finally, stir in the peas and cook for 5 more minutes until they are heated through. Serve with rice or bread.
