The dish gets its name from the 'bubbling' and 'squeaking' sounds the potatoes and cabbage make while frying in the pan. Bubble and Squeak is a quintessential comfort food, often served alongside a cooked breakfast or as a side dish to leftover meat and gravy.

  • 500 g cooked mashed potatoes (leftovers)
  • 200 g cooked cabbage (leftovers), chopped
  • 3 tablespoons butter or oil
  • to taste salt and black pepper

Instructions

Step 1: Preparing the Mixture

In a large bowl, thoroughly mix the mashed potatoes and the chopped cabbage. Season the mixture with salt and black pepper.

Step 2: Shaping and Frying

Heat the butter or oil in a large frying pan. Divide the mixture and shape it into flat patties (or one large patty). Place the patties in the pan and fry over medium heat for about 7-8 minutes, until the bottom is golden and crispy. Then, carefully flip them and fry the other side.

Step 3: Serving

Serve hot, either as a side dish to a roast and gravy, or as a main course with a fried egg and bacon.
