Hungarian Beef Pörkölt with Mashed Potatoes

Pörkölt is one of the cornerstones of Hungarian cuisine. It's made by slowly simmering meat with onions and paprika until the sauce becomes rich and thick.

Beef Pörkölt is particularly succulent thanks to slow cooking. Here, it's paired with smooth mashed potatoes that balance the intense, smoky flavor of the stew.

Ingredients

Pörkölt

  • 1 kg beef (shoulder or shin), diced
  • 3 yellow onions, chopped
  • 2 tbsp sweet paprika
  • 3 tbsp lard or oil
  • 1 tomato, chopped
  • 1 green bell pepper, chopped
  • 2 garlic cloves, minced
  • to taste salt
  • as needed water

Mashed Potatoes

  • 1 kg potatoes
  • 50 g butter
  • 200 ml milk
  • to taste salt

Instructions

Beef Pörkölt

Sauté the onions in fat until golden brown.

Add paprika, then stir in the beef and combine well.

Add tomato, pepper, garlic, and salt.

Add a splash of water and simmer covered for 2 hours, stirring occasionally.

Mashed Potatoes

Boil peeled potatoes in salted water until tender.

Drain, add butter and warm milk, and mash until smooth.

Serve with the beef pörkölt.
