In a bowl, beat the egg yolks with sugar using an electric mixer until light and thick (about 5 minutes).
Then add mascarpone and gently mix it in with a spatula or briefly mix with a mixer until the mixture combines.
Do not overwhip.
Quickly dip the ladyfingers into the coffee — about 1–2 seconds on each side.
They should not be overly soaked.
Place a layer of soaked ladyfingers in a baking dish (approximately 23x33 cm).
Spread half of the mascarpone cream over the ladyfingers.
Repeat with another layer of ladyfingers and the remaining cream.
Cover with plastic wrap and refrigerate for at least 4 hours (preferably overnight).
Before serving, dust the top with unsweetened cocoa powder and optionally sprinkle with grated dark chocolate.
