Taktouka is a simple yet incredibly flavorful Moroccan dish. It's reminiscent of a salad, but its consistency is more like a delicious dip. It tastes best when all the ingredients are cooked slowly to allow their flavors to perfectly meld and create the sweet-and-sour, smoky notes typical of Moroccan cuisine.

  • 3 tomatoes
  • 4 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground sweet paprika
  • 2 tablespoons fresh cilantro, chopped

Instructions

Step 1: Prepare the peppers

Roast the peppers over an open flame, on a grill, or in the oven until their skin is blackened and begins to puff up. Place them in a plastic bag or a bowl, cover, and let them sweat for about 10 minutes. Then, easily peel them, remove the seeds, and chop into small pieces.

Step 2: Cook the mixture

Peel the tomatoes, chop them into small pieces, and cook them in a pan with olive oil over medium heat. When they start to break down, add the chopped peppers and garlic. Cook for about 10 minutes to allow the flavors to combine.

Step 3: Season and serve

Add the cumin, paprika, and salt. Stir and cook for another 5-10 minutes, until the sauce thickens. Remove from the heat and stir in the fresh cilantro. Serve warm or at room temperature, ideally with bread and olives.
