Papanași (Romanian Fried Cheese Doughnuts)

Papanasi are a favourite treat. They are incredibly soft because the main ingredient is cottage cheese/quark. They are traditionally prepared as a large 'donut' and a small 'hat' that is placed on the central hole of the finished doughnut.

A very fine, dry cottage cheese is used for preparation, or a mixture of ricotta and cottage cheese can be used. For the best taste, the jam should be tart (e.g., blueberry or sour cherry) to balance the sweetness of the doughnut and the richness of the cream.

Ingredients

I. For the Cottage Cheese Dough

  • 500 g Soft cottage cheese (ideally drained)
  • 200 g Plain flour
  • 3 Tbsp Granulated sugar
  • 2 pcs Egg yolks
  • 1 tsp Baking powder
  • 1 tsp Vanilla extract or vanilla sugar
  • 1 to taste Pinch of salt
  • 1 as needed Oil for frying

II. For Serving

  • 200 g Sour cream (min. 16%)
  • 4 Tbsp Blueberry, sour cherry, or strawberry jam
  • 1 for dusting Powdered sugar

Instructions

Step 1: Preparing the Cottage Cheese Dough

Sieve or mix the cottage cheese until smooth. If it is too wet, let it drain. In a bowl, mix the cottage cheese with egg yolks, sugar, vanilla extract, and salt.

Sift the flour with baking powder and gradually mix into the cottage cheese mixture. A soft, slightly sticky dough will form. Do not knead it for too long, or it will be tough.

Step 2: Shaping

Divide the dough into 8 equal parts for the donuts and 4 smaller parts for the 'hats'.

Shape the larger part into a disc and make a hole in the center (with your finger or a small cutter). Make a small ball (hat) from the smaller part.

Step 3: Frying

Heat the oil in a pot to medium temperature (about 170 °C (338 °F)).

Place 2-3 donuts and 1-2 balls at a time and fry for 3-4 minutes on each side until golden brown. Remove and place on a paper towel to remove excess oil.

Step 4: Serving

Place a hot Papanași (donut) on a plate. Add a large spoonful of sour cream in the center and around it.

Drizzle generously with jam and place the small fried ball on top of the 'donut'. Dust with powdered sugar and serve immediately.
