Ingredients

For the Chipsi Mayai

  • 2 large potatoes
  • vegetable oil for frying
  • 3 large eggs
  • 1 small onion, finely chopped (optional)
  • salt and black pepper
  • 0.5 teaspoon turmeric powder (optional, for color)

For serving (optional)

  • fresh kachumbari salad (tomatoes and onions)
  • hot sauce or ketchup

Instructions

Step 1: Prepare the fries

Peel and cut the potatoes into thin strips, like french fries. Rinse them with cold water and pat them completely dry with a paper towel.

Step 2: Fry the potatoes

Heat a generous amount of vegetable oil in a deep pan or pot to about 175°C (350°F). Fry the potato strips in batches until they are golden brown and crispy. Remove them with a slotted spoon and place them on a paper towel to drain. Season with salt immediately.

Step 3: Prepare the egg mixture

In a bowl, whisk the eggs with a pinch of salt, pepper, and turmeric (if using). Add the finely chopped onion (if using).

Step 4: Cook the omelette

In a non-stick pan, add a small amount of oil. Scatter the crispy fries evenly on the bottom of the pan. Gently pour the egg mixture over the fries, making sure they are well-coated.

Step 5: Finishing and serving

Cook the omelette over medium-low heat. Once the bottom is set and golden brown, carefully flip the omelette (you can use a plate to help) and cook the other side until the egg is fully cooked. Slide the omelette onto a serving plate, cut into wedges, and serve immediately with kachumbari, ketchup, or hot sauce.
