Ndizi Nyama is a gourmet experience that will surprise and satisfy. The combination of tender meat and soft, savory bananas that melt in your mouth is something you must try. This recipe will guide you through preparing an authentic stew that is not only delicious but also very easy to make in one pot.

Ingredients

For the stew

  • 500 g beef stew meat (e.g., chuck), cut into cubes
  • 4 green, unripe bananas (plantains), peeled and cut into large chunks
  • vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, crushed
  • 1 tablespoon fresh ginger, grated
  • 2 tomatoes, chopped
  • 1 can (400 ml) full-fat coconut milk
  • 1 cup beef broth
  • 1 tablespoon curry powder
  • 0.5 teaspoon chili powder (optional)
  • salt and black pepper

Instructions

Step 1: Prepare the ingredients

Peel the green bananas (this can be tricky; use a small knife to score the peel lengthwise and then pry it off). Cut them into large chunks. Cut the beef into cubes and season with salt.

Step 2: Brown the beef

In a large pot or Dutch oven, heat oil over medium-high heat. Add the beef cubes and brown them on all sides. Remove the beef and set it aside.

Step 3: Prepare the sauce base

In the same pot, add the chopped onion and cook until soft. Add the crushed garlic and grated ginger and cook for another minute. Add the chopped tomatoes, curry powder, and chili powder. Cook for a few minutes until the tomatoes break down and form a thick paste.

Step 4: Slow cooking

Return the browned beef to the pot. Add the green banana chunks, beef broth, and coconut milk. Stir everything together, season with salt and pepper, and bring the stew to a boil. Then, immediately reduce the heat to a low simmer and cover the pot tightly.

Simmer for 1.5 to 2 hours, or until the beef and bananas are very tender. If needed, add a little more broth or water to prevent the stew from drying out.

Step 5: Serving

Ladle the hot Ndizi Nyama into bowls. It is a complete meal on its own, but can also be served with a side of rice or chapati.
