Ugali and Sukuma Wiki are the heart and soul of many homes in East Africa. Ugali is neutral but provides energy, while Sukuma Wiki is packed with flavor and nutrients. While simple, the meal is satisfying and nourishing. This recipe will show you how to prepare both parts of this iconic dish.

Ingredients

For the Ugali (cornmeal porridge)

  • 2 cups water
  • 1 cup white cornmeal

For the Sukuma Wiki (braised greens)

  • 1 large bunch collard greens or kale, chopped
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, crushed
  • salt and black pepper

Instructions

Step 1: Prepare the Ugali

In a pot, bring water to a boil. Gradually add the cornmeal while stirring continuously with a wooden spoon. The mixture will begin to thicken. Stir vigorously to break up any lumps until it forms a very stiff, smooth porridge. Reduce heat to low, cover, and let it cook for about 5-10 minutes.

Step 2: Shape the Ugali

Turn the Ugali onto a serving plate and form it into a smooth mound. Set aside.

Step 3: Prepare the Sukuma Wiki

Wash and chop the greens. In a large pan, heat the oil over medium heat. Add the chopped onion and cook until soft and translucent.

Step 4: Cook the greens

Add the diced tomatoes and cook until they have broken down into a sauce-like consistency. Add the crushed garlic and cook for another minute. Add the chopped greens and cook for 5-10 minutes, stirring occasionally, until they are tender but still vibrant green. Season with salt and pepper to taste.

Step 5: Serving

Serve the hot Ugali with the Sukuma Wiki on the side or on top. The traditional way to eat this dish is with your hands: pinch off a small piece of Ugali, roll it into a ball, make an indentation with your thumb, and use it as a 'spoon' to scoop up the Sukuma Wiki.
