A platter of classic Buffalo chicken wings with celery and blue cheese dressing

Originating in Buffalo, New York, in the 1960s, these wings have become a global phenomenon. The key to the authentic flavor is the simplicity of the sauce, which is a harmonious emulsion of melted butter and Frank's RedHot Original hot sauce. The crispiness of the wing is paramount, which is why deep-frying is the traditional method. However, baking can achieve a great result with a fraction of the fat. This recipe provides both options so you can choose the method that best suits you. The cold, crisp celery and the rich, pungent blue cheese dressing are not just garnishes; they are essential components that perfectly balance the heat of the wings.

Ingredients

For the Wings

  • 1 kg chicken wings (drumettes and flats)
  • 2 liters vegetable or canola oil (for frying)
  • 1 tablespoon baking powder and salt (for baking method)

For the Buffalo Sauce

  • 0.5 cup unsalted butter, melted
  • 0.5 cup Frank's RedHot Original hot sauce

For Serving

  • 4 stalks celery sticks
  • 0.5 cup blue cheese dressing

Instructions

Step 1: Prepare the Wings

Pat the chicken wings completely dry with paper towels. This is crucial for achieving a crispy skin. If baking, toss the wings with baking powder and a pinch of salt.

Step 2: Cook the Wings (Choose one method)

Deep-Frying Method: Heat oil in a large pot to 190°C (375°F). Carefully add the wings in batches and fry for 8-10 minutes per batch, until golden brown and crispy. Drain on a wire rack or paper towels.

Baking Method: Place wings on a wire rack over a baking sheet. Bake in a preheated oven at 220°C (425°F) for 20 minutes, flip, then bake for another 25-30 minutes until crispy and cooked through.

Step 3: Make the Buffalo Sauce

While the wings are cooking, melt the butter in a small saucepan over low heat. Once melted, remove from heat and whisk in the Frank's RedHot sauce until fully combined. The sauce should be smooth and emulsified.

Step 4: Combine and Serve

Place the hot, cooked wings in a large bowl. Pour the buffalo sauce over the wings and toss gently until every wing is evenly coated. Serve immediately with celery sticks and a side of blue cheese dressing for dipping.
