- 500 g mixed seafood
- 250 g white fish (e.g., cod), cubed
- 200 g shrimp, peeled
- 200 g mussels, cleaned
- 1 pc onion, chopped
- 4 cloves garlic, minced
- 1 pc red bell pepper, chopped
- 2 pcs tomatoes, diced
- 400 ml coconut milk
- 0.5 cup white wine
- 2 tablespoons olive oil
- to taste salt and black pepper
- for garnish fresh cilantro or parsley

Step 1: Prepare the Base (Sofrito)
Step 2: Simmer the Seafood
Increase the heat and pour in the white wine. Scrape up any browned bits from the bottom. Add the coconut milk and bring to a simmer. Season with salt and pepper. Add the white fish chunks and cook for 5-7 minutes. Then add the shrimp and mussels, and cook for another 5-10 minutes until the mussels open and the shrimp turn pink. Discard any mussels that do not open.
Step 3: Finishing and Serving
Remove from heat and let it sit for a few minutes. Garnish with fresh cilantro or parsley. Serve hot, preferably with a side of white rice, sliced avocado, or with crusty bread for dipping in the delicious sauce.
